Meal Prep - Week 2 Menu

 
Here was our menu from week 2: 
It was super easy, 2 hours and done! 

Lunches & Dinners
- salmon baked with lime and dill
- turkey meatloaf muffins I have been making this recipe for years, love them. Tip: add more spices
- oven roasted vegetables (grape tomatoes, broccoli, zucchini, onion, peppers, brushed with olive oil, 400F for 40 minutes)
- salad (romaine cut and washed,  cucumber, radishes, red onion, cucumbers, avocados)

Snacks
- peanut butter protein balls
- chocolate peanut butter crunch bars
- washed and ready pineapple, blueberries and raspberries

Canoe Tripping: Meal Plans, Supplies & Packing List with updates


We are headed on our annual canoe trip today and for the first time, we are taking Finnegan. I am a little unsure of how it will all go, but here's hoping it works out. This year we are going for 3 days and 2 nights. I always google what other people bring to look for new ideas, so here is our list for meals, clothes and supplies.

Menu Plan

Breakfasts
- Eggs, for making scrambled eggs and for fish batter (cracked into a plastic water bottle for easier transport)
- Instant oatmeal
- Protein bites (recipe here)

Lunch
- Quinoa Salad (I made this one here)
- Cans of tuna
- PB sandwiches 

Snacks
- Pistachios
- Beef Jerky
- Licorice 
- Cut up pineapple
- Spitz

Dinner
- Fresh pickerel 
- Potatoes
- Pasta and sauce
- Italian sausages 

Cooking extras:
- salt, pepper, butter, parmesan cheese

I packed each Jeff and I our own snack/drink bag to have handy while canoeing. I put frozen waters, flavoured soda water, can of tuna, licorice and pistachios in mine.

Clothing
This is what I will be bringing, I am sure Jeff will bring half as much
- 2 bathing suits Forgot about skinny dipping, no bathing suit needed
- 1 pairs of shorts
- 1 pair of capris (workout style)
- 1 pair of sweatpants
- 1 long sleeve shirt
- 2 workout shirts (with built in bras, so no bras required)
- 1 rain jacket with a hood
- 3 pairs of underwear
- 2 pairs of socks
- 1 hat
- 1 buff (similar here) *so good for soaking and wearing around your neck in the blazing sun*
- 1 rash guard shirt
- 1 pair of sturdy, waterproof shoes. I bought these ones (sexy, I know) *seriously best things ever*

For Finnegan (our dog)
He has been treated for ticks

- Frisbee

Summer Desserts: Coconut Whip Cream & Peaches

Ingredients for coconut whip cream: maple syrup, cinnamon, nutmeg, peaches


If you haven't made coconut whip cream yet, you are missing out...BIG time. Being lactose intolerant I am always looking for new delicious and healthy dessert treats and coconut whip cream on any fruit is the easiest, quickest dessert you could make.

The key to this recipe is always keeping can of coconut whip cream in the fridge UPSIDE DOWN.  When you choose a can from the store, pick one that when shaken does not sound very liquidy, the Thai Kitchen brand seen in the picture above works well. I try to always have a can in the fridge, but you need it to be in there at least 24 hours.


Ingredients:
1 can of coconut milk
1-2 Tbsp of pure maple syrup
1/4 tsp nutmeg
1/4 tsp cinnamon
fruit of choice
mint leaves

Directions:
Open the can of coconut whip cream upside down. Scrap the hard cream into a mix master. You can keep the liquid for smoothies or another recipe if needed. Whip the cream for 1- 2 minutes or until the lumps are gone.

Next add the maple syrup, cinnamon and nutmeg to taste. I always add more spice, but it's up to you.
In a bowl or martini glass spoon a heap or two of the coconut cream and add fresh fruit. Garnish with mint leaves. Makes enough cream for 4 desserts.

Tasty Tuesday - Coconut Chicken Fingers (gf)

Coconut Chicken Fingers

Ingredients

  1.5 lbs of chicken cut into strip size

  • ½ cup of coconut flour
  • ½ teaspoon sea salt 
  • 2 eggs + 1 tablespoon water
  • 2 cups sweetened coconut flakes

  • Asian sweet chili sauce, for dipping

Directions

Preheat the oven to 400'F and line a baking sheet with parchment paper. Cut up the chicken into strips. Prepare 3 bowls - one with the egg and water mixture, one with the coconut flour and salt and a third with the coconut flakes. Take each piece of chicken and toss in the flour, then egg mixture and finally the coconut. Place on the baking sheet and cook 15-20 minutes until the chicken is cooked through and coconut starts to brown. Serve immediately with sweet chilli sauce for dipping. These work well to freeze and save some for another time as well.

2 Life Changing (well okay, maybe just delicious) Healthy Snacks

Sugar Free, No Bake - Peanut Butter Cocoa Balls

Ingredients:


3 cups rolled oats

1/2 cup honey (I used less)
1/4 cup natural peanut butter (I used more)
1/2 cup coconut oil

1/2 cup unsweetened cocoa powder
1 1/2 teaspoon vanilla
1/4 teaspoon salt

Directions:


In a medium sauce pan over medium heat, stir the honey, coconut oil and peanut butter together until combined and smooth. Next add in the remaining ingredients, stir and remove from heat. Use your cookie scoop or (if you are living in the dark ages) a spoon to make little balls of the mixture. Drop onto a cookie sheet lined with parchment paper and put them in the freezer to cool down for about 15 minutes. I recommend keeping these in the fridge as they taste much better cold and hard! These things taste kinda like my monster cookies...but guilt free! #cleaneatingprogress

Ingredients:
1 can of coconut milk (that has been in fridge upside down for at least 6 hour)
2 tbsp unsweetened cocoa powder
1 tbsp maple syrup
berries

Directions:

This is my go to for a quick and easy treat. I always try and keep at least one can of coconut milk in the fridge (upside down) because you never know when you want to whip up this very delicious very easy recipe. When you are choosing your coconut milk at the store, shake the can and try and get one that doesn't have much movement or sloshing. When you open the refrigerated can it will have separated into hard packed cream and liquid. For this recipe you can throw away the liquid (or store for a smoothie). I use my mix master to whip the hard coconut cream and then slowly add cocoa powder and maple syrup to taste. You can't go wrong here, add more or add less, whatever you like! Once it's all whipped add a dollop heaping scoop to your favourite cut up fruit or berries...enjoy!
